Osman dried olives with bones are dried in the open air in special wicker baskets in layers, the layers are sprinkled with salt. The olives are periodically turned by hand to achieve a uniform drying process.
Osman dried black olives olives are harvested after they are fully ripe and turn black, that is when they have a fleshy structure with a thin skin and a small stone that easily separates. Such olives are rich in vitamin A, iron and calcium.
